As a kid, one of my most-requested dinners was “Impossible Cheeseburger Pie.” If I recall correctly, it was a recipe found on the back of a baking mix box. Anyway, I was obsessed, it was the best! So naturally, as a health-seeking adult, I had to find a way to keep cheeseburger pie in my life. This keto-friendly dinner recipe tastes indulgent, while actually being quite healthy.
My Momma used to make this recipe called Impossible Cheeseburger Pie. I never could understand why they called it that. At first, I thought it must be because the recipe was so complicated and challenging to make, but she assured me that it was really quite simple. We finally decided it must be because it’s impossibly delicious. As a teenager, I wrote the recipe down in my personal, handwritten cookbook of family recipes.
But as an adult, I couldn’t bring myself to make it. As time has gone on and we’ve all learned more about the harmful ingredients found in processed foods, it becomes more difficult even to think of putting those foods into my body.
Well, it finally dawned on me one day that scratch ingredients came long before baking mixes. Just because my recipe called for a baking mix, didn’t necessarily mean that I had to use a baking mix, I could put together some actual ingredients and make it myself. I then decided to take it a step further and make it grain-free, too.
It wound up being kind of an ordeal. Turns out, when I wrote down the original recipe as a teenager, I forgot to write the oven temperature, and I forgot to include some ingredients (eggs). Whoops!!
After one disastrous attempt, my husband was delightedly surprised when I finally got it right! He’d never tried the original and had no idea what to expect. Plus, I have a tendency to prepare very basic meals (meat and a vegetable), particularly on weeknights. So, something like this was out of the ordinary and he loved it!
With minimal ingredients and a bake-time of 25 minutes, this recipe comes together quickly, making it a perfect dinner for busy weeknights. I really can’t ask for much more than quick and easy after a long day of work, and my Very Possible Cheeseburger Pie really delivers in both those arenas.
