Well, I know this is going to come as a huge surprise, but it turns out I did not, in fact, lose 10 pounds overnight. I hopped on the scale this morning and wound up with a weight that made a heck of a lot more sense. Anyway, this week I made my yummy taco salad recipe!
The great news is, I’m down 1 pound from last Friday, and the really great news is I’m down 5 pounds overall!
Working to lose this weight has not been a significant inconvenience in my life. I’m eating carefully (eating real, whole foods; avoiding all sweeteners and grains; eating when I am hungry and stopping eating when I am no longer hungry), and I’m getting about an hour of exercise each day.
My exercise consists of 20-30 minutes of strength training and a 20-30 minute walk with my husband and dog.
What I’ve Been Up to in the Kitchen
Since Hubs and I have both cut the sweets and the grains, we’ve had the pleasure of finding creative ways to enjoy our real, whole foods without the crap.
This week, we had a whole lotta mixed greens leftover from the weekend that we’ve been frantically trying to get through. So, we’ve been eating salad every night either as a side or a main dish.
I was thinking of making a steak salad last night, but I pulled a pound of ground beef out of the freezer instead on a whim. Then, I remembered that I had found a quick and easy recipe for homemade taco seasoning.
The Result? An Awesome Taco Salad Recipe
I wound up pulling together a kick-ass taco salad recipe from random ingredients we already had at home. On top of that, we ended up with enough leftover taco meat for a taco scramble for breakfast this morning. AND, we’ll be having taco salad for dinner again tonight!
The best part is, I’m not even tired of everything taco yet! (We’ll see how I’m feeling tomorrow, but right now I’m getting hungry just thinking about dinner tonight).
