My best friend came to stay with us for a few days in January. I wanted to make a simple, NSNG or Paleo weeknight dinner, but my friend doesn’t really eat these ways. So, it was important to me that I make a tasty dinner that anyone would enjoy.
This simple soup is hearty and filling, and basic enough to whip up on a busy night.

Make it Even Simpler
Usually, I would make this soup with an onion, because it just adds another layer of flavor, but while my friend was here, I omitted the onion because she doesn’t like them. It was an easy modification that made for even less prep-work, the flavor was great, and it was a small way to show my friend I care.
Tasty Tip if You’re NSNG or Not Strict Paleo
Hubs and I eat a mostly-Paleo diet, but we like our dairy. I added a little dollop of sour cream to each bowl of soup when I served it, and it was so delicious!
A Simple New NSNG Paleo Weeknight Dinner Staple
This is one of those recipes that just isn’t going to go away. It comes together quick, it’s filling, and so flavorful. A weeknight staple for sure.
