Recipe | Paleo Yogurt Parfait

Look no further for the perfect paleo breakfast, particularly for weekday mornings.

Last summer, after reading the book Coconuts and Kettlebells (highly recommended, by the way), I embarked on a journey with elimination dieting. For a while at that point, I’d been suspicious that dairy may have been causing me some minor health issues. So, I wanted to determine for sure if that was what was going on.

Anyway, I’ve never liked milk just on its own, but I’ve always loved cream in my coffee and yogurt for breakfast. Well, by the end of this little adventure I’d been through, I wound up losing my taste even for those.

These days, I eat a mostly Paleo diet (never lost my taste for cheese!), which includes coconut milk in my coffee (when I don’t just drink it black), and coconut yogurt for breakfast. The probiotics in the coconut yogurt are a yummy way to get that important dietary need in for the day.

Breakfast can be both delicious and good for your gut.

Don’t Expect to Whip this Paleo Breakfast Up Real Quick One Morning

The coconut yogurt needs 24 hours to do it’s thing before it’s ready to eat, and the “granola” needs some time to cool.

It’s Totally Worth It

It takes a little advance-planning to really get this parfait right, but I promise, you won’t be disappointed if you go for it. Once your ingredients are prepared (which can be done during your weekend meal prep), it’s the perfect paleo breakfast to enjoy all week long.
